Fermented foods have been through a process of lactofermentation, in which natural bacteria feed on the sugar and starch in the food creating lactic acid. This process preserves the food, and creates beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics.

In the 19th century, Louis Pasteur discovered that micro-organisms were responsible for infections and realized that strengthening the body, rather than attacking the invading organism, can prove to be a more effective strategy. However, for the last 100 years, the focus has been on the use of antibiotics as the “bacteria killer”. We came to think as bacteria as all BAD, with little attention placed on the GOOD bacteria.
